I visited here a while ago, I think couple of month ago. Food we ordered ranged from great to okay. Ordered camembert cheese tempura, which was served with pink salt, (Which I didn't like - too salty, pink salt flakes would be a better option) and Salmon carparccio, which was simple and pleased my palate.
Service was reasonable I guess, since Watermoon is not classified as 'fine dining' although they rushed the drink order slightly bit too early and was unattentive after the drinks were served.

2nd Time at Blancharu, and it is superb at the moment. From what I heard, the owner chef here is responsible for winning hats for Gallileo back 5 years ago. However, just slightly disappointed the innovative and somewhat magical hit in Gallileo few year down is not visible in the dishes here. (Although they were great). Anyway, I will be back.

I always heard from people who went to Tets as being overpriced and over-hyped.
I believed so, until I walked in. Although my companions of the night were dressed very (nearly inappropriate) for dining at the infamous Tets, the staff member didn't seem to mind at all! Not a frown or a single hesitation, they were kind from the beginning to the end.
I've been to dozens of fine dining in Sydney, but most of the waitstaff or even Sommeliers would decide to give you the 'fake' smile or even show their dislike of you because how you dress. But not Tets.
Food was perfect. Master of balance I could say. Ingredient of the dish perfectly balances each other and enhances the wholeness. Not like other 'fusion' I've dined at. Each and every single plate is served with perfection. Also, the desserts, were just absolutely wonderful. Especially the 2nd dessert.
Service. They were wonderful. It seemed like they gathered the best in Sydney.
Always wondered why Sydney Fine diners lacked in professionalism compared to those in Japan, Singapore and the States. Now I think I know why, because Tets has them all.
I would love. Just love to try some drinks at the bar area next time if possible.
