Wow, and no, thats not a nice wow. You would think with the amount of cash they spent on this new establishment they would employ staff that knew the basics of cocktail making in a cocktail bar. At least put your staff through a classic cocktail crash course. Keep your drinks consistent. Have your bar stocked, don't make the patron feel like a pain, when its you that hasn't done your job properly. It's just a shame this cocktail bar has so much potential but the "cocktail bar staff"? completely ruined it for us. Tacky tacky tacky.
Ok I may be biased as I have been a long time customer of the boys from the original Will and Tobys in Darlo but this venue really does it for me. The space is seriously unique and sexy, french colonial opulence with a life sized horse (lampshade) smack bang in the middle. The crowd is Eastern Suburbs offbeat and dressed up (it was Sat nite) and seemed relatively friendly and non pretentious. The highlight is the drinks and service, some of the best cocktails I have tasted, made with care pride and humility by two of the best dressed bar staff you will ever lay eyes on.
I was particularly impressed with the way they served my female companion first and immediately (in a chivalrous as opposed to sleazy manner) and the pretty young waitresses were refreshingly competent and efficient. To top the night off we bumped into friends here, so very Will & Tobys and were greeted goodnight with a friendly smile by 'Alex', arguably Syndey's best door lady. Not an every day watering hole, rather somewhere to celebrate and feel special.
