Tucked down one end of the Eating World food court in Chinatown, is a small stall decorated only with a hanging red curtain and a menu printed on a huge cardboard sign. Gumshara serves traditional Japanese ramen, and in the short time since opening, has gathered a legion of devoted followers.

Wow, I cannot believe I didn't know about this place until recently. Their tonkotsu ramen was probably the best ramen I've ever had. Their broth is so good, you will be sipping every last drop of it.
Also would like to note the high-quality control by the chef. As I was waiting for my food, I peered into their kitchen and could see the chef consistently taste testing the soup with a new plastic spoon everytime they prepared a group of order.

Eating World had been dead to me since the closure of Curry Laksa house many years ago. Then Gumshara opened.
Since then and my first bowl of their amazing Tonkotsu ramen with pork spare rib I've been hooked. Add a soft boiled egg and a chilli bomb and you'll have an amazeballs bowl of ramen. Very rich and filling, but even at the bottom of the bowl I'm thinking about how soon I can get back there. Best ramen in the city.

Been coming here for the last 5 years after reading it on grabyourfork. The ramen here has the thickest soup in Sydney.
I've personally watched the chef taste-test each bowl of ramen soup using a new plastic spoon each time to determine if it's worthy of serving to the customers. This is a rare sight, but speaks of the quality control they have setup in-house.
Chasu and egg is always perfect as well. Not the best place to take a date, but I think she'll forget about it once she digs into it. Tell her the collagen is good for the skin!
Love this place. Can't recommend it highly enough.

Gumshara is a diamond in the effluent heap. Personally, I love the spare rib ramen. The soup is thick and porky - stay away if you don't like pork. It's an acquired taste to some extent, but extremely nice if you like that type of ramen.
Don't forget to order the side of soft boiled egg. Delicious!

I would have never imagined such a good ramen place exists in a dimmed corner of a food court if my friend did not keep going on about it on facebook. It is not like any ramen you've had around Sydney, and I've seen them being described as 'the soup is so thick it's like liquid meat'.
The soup is so thick that you'll feel a bit sick after you finish the bowl, but its so good that you'll crave it again pretty soon. We would order the pickled cabbage to go with it as it adds a bit of spice and the crunch gives the noodle a good texture.
I love how no matter how much rave reviews and press they've had, they're still in that humble corner serving the same ramen at the low price.

Like everyone else the cleverly named "eating world" holds very little interest to me except for it's shining star. I am yet to be turned away from the crisp and delightful pork rib which is absolutely sensational but the broth itself is truly unique... I can see why it's called the chronic.
It's pretty full on and I find if I don't bring my A-game I can barely make a dent in the bowl and expect to be wearing gumshara flavoured lipgloss for the next few hours. Not for the faint hearted, it is incredibly rich and thick and might even be too rich for some but it truly is amazing.
I feel sad though when I watch people wander round the food court aimlessly and ordering from suspect places... I feel like screaming at them Gumshara that's what you want. Love the pickled garlic and goodies to dress it up too. Lovely service. You can even BYO a container and take it home if you like.

I've only found this place through numerous food blogs, and when Everyone raves about this place, you know it serves good food. Gumshara is a hidden gem of a shop amongst other dirty Asian stalls in a dingy, utterly disgusting food court in Chinatown. But ambience aside, you're here for the food and that's all that matters.
You know you're getting quality food when you see the chef personally taste test Every single bowl of ramen before it's passed to the counter onto the customer and they go through a heck of alot of disposable spoons! The soup here is a legend, pork bones boiled for a week and reduced down to a thick gluggy yet smooth as soup that slides down your throat like bliss. This is the ultimate cure for winter! If lucky, you can order the pork rib ramen, limited supply of 10 a day!
For tonkotsu ramen, there is absolutely No Where Else in Sydney, possibly all of Australia that does it better. This, is the mecca of tonkotsu ramen.

Its true that their location is unflattering, appalling, etc etc, whatever term you wish to describe a food court (truth be told, its worst than sussex and market city) - but their tonkotsu ramen is to die for. I crave my collagen therapy everyday.
I love the fact that they don't use msg (which is true as I never feel thirsty afterwards, compared to all the other places I've been to) and that you can customise the broth. It's simple and Perfect, seriously, tonkotsu ramen cannot get better than this place.
What's really impressive is that the chef would personally taste each bowl of ramen to ensure the soup is up to standard and to his liking. How much care can one person put into their food...? Gotta love that. Only thing missing is a cart booth where we can sit and eat like those ramen booths in Japan, oh the feeling!~

Simply the best ramen in Sydney! I love their tonkatsu ramen with thick soup. They cooked it to perfection. The only drawback is their location, which is in a food court. Make sure you get in early, they always have the longest queue, compared to other restaurants in the food court area. I also love the fact that they offer self service for chilli, ginger and garlic, so you can be sure that you have enough.
