Jonathan Bruell has recently taken up the position of Kitchen and Beverage Director for Galileo. Bruell's style of cuisine is a wonderful combination of Australian produce and innovative modern cuisine, served in an atmosphere reminiscent of a grand Parisian salon.

This is one of my favourite restaurants in Sydney. Stately, luscious decor, quiet, dark, and extravagant, definitely on the expensive side. It's all very inward-facing - there's no view, the heavy curtains discourage peering at the street outside - and with the high-backed chairs in the lounge and dim lighting makes for a very intimate dinner.
We had four people, each of whom had a slightly different variant on the 6 course degustation due to being in various places on the vegetarian-piscatorian-carnivore spectrum. The order came out correctly but the seating was mis-entered somewhere leading to some confusion about who should be served what at some courses, which the staff handled with panache and humour.
Note that the 12 course degustation is a long and involved process that needs starting on early - there's also no vegetarian option for it, although I rather suspect they could accommodate.
The price tag at the end of it all, wine included, was eye-popping, but still very worthwhile - it's a classy, old-fashioned dining experience.

We went here last night for dinner and it was extremely average. We have young children and it was a big night out for us without the kids and frankly we wished we had gone somewhere else. Anywhere else. We had a nice table and the ambience was good but that's where the good times ended. It took us 15 minutes to get our pre dinner drinks and the entree came before anyone had brought us a drink or offered us bread. In the end we had to ask for bread. We had to refill our own glasses all night. No one even noticed this. The courses were brought out shotgun style and felt rushed. The compulsory degustation menu was bland and too dry - hard. The fried jewfish tasted like fish and chips from the local and the squab was horrible. It was bleeding and tough and I didn't even eat it. For a $350 bill it was dreadful value for money and we definitely won't be going anywhere in the region of the Observatory Hotel ever again.

We recently celebrated our 25th Wedding Anniversary at Galileo Restaurant. We had booked in July and were seated at a cosy table along the wall of the restaurant. This particular night the restaurant was booked out however for the majority of the time we were in the restaurant the tables either side of our table were vacant which added to the ambience of the evening. We had the 6 course degustation menu and the food was delicious and each course was presented beautifully. We had several waiters throughout the evening bringing out each course and another waiter would explain in detail each course. Before we began our meal our waitress asked us to go through the menu and it was no problem changing a couple of the courses with the vegetarian options. We didn't have to ask the waiter for water or bread rolls and our wine was poured at regular intervals. We found all the waiters to be friendly and attentive and the service was excellent. Absolutely the place to celebrate any special occasion. We will be back again.

I was there for a special occasion. booked way ahead to avoid disappointment. we were sited in the middle of the room, which is strange because there were lots of tables available elsewhere, the waiter was rude, no smile on his face the whole night, when we ask for some water, had to wait for 20 min and ask again, before it arrived. he was very nice to the next table though... must be because they ordered wine, we didn't. food was dumped on our table, when we ask him to explain the dish, he gave us that "shouldn't you know" face....
I though place like Galileo would have highly trained staff member, that waiter should be sacked. never ever go back there again, and will never recommend to anyone.... (as long as that waiter works there)
feel sorry for the chef and other staff, because the food was very nice (small though).....

I went there with my girlfriend who did not really enjoy the food, it is very intricate and goes in some interesting directions. The chef served us some samples between courses which was nice but not in balance with our main meal. Staff were very very nice and helpful in explaining the menu. Fairly expensive but it was a nice experience. The actual decor is great and hotel a beautiful place.

This restaurant a little like the finer dining restaurants that Sydney used to have. Very good service, food and wine. Fairly expensive though, expect to spend over $120 per head. Definitely worth a visit.

After having read so many positive reviews of Galileo I decided to try it out. I was bitterly disappointed however. The food had its ups and downs - some dishes were on the mark whilst others were confused and pointless. I enjoyed the amusebouche of the egg with truffled froth and foie gras, the pear sorbet, venison tataki and tuna with coleslaw but was aghast at the beef rump and tuna with ginger broth. The service was unfortunate - they mixed up our orders and neglected to notice the details which sets a great restaurant apart from the rest. The ambience was also lacking. We were seated at a table with too much light and close to the entrance where the piano was being played too loudly for us to converse. Not romantic in the least! I wanted so much to enjoy my night but it was one of those completely mediocre, disappointing dining experiences. And a completely unjustified price - 300 for 2.

Had a guest from interstate and I thought I needed something different. And a big smack on the face, the difference I got from Galileo - in both extreme ways.
The food was immaculately calculated to tease your taste buds. Eggs shells were use as containers for some stuffs which I forgot what was it is but the bottom line, it was uuummppphhh!!! I had a rack of lamb, normally I would not hesitate to discard the fatty part but this time, I consumed it all, it was delicious!!!
THe food, guys is Great. The value though, make sure you have enough till the end of the month as the damage is quite severe (credit card or cash) it's severe. Two of us with 2 serves of glass of wine each, no entree or dessert nearly $200.
I dont understand... Galileo.. strategic wise. If you lower the pricing a little more, you will be a sell out every night.

Went there to try their 8 degustation menu after hearing many great raves about the place and we were not disappointed. Food was delicious and presented nicely. The highlight being their oyster, tuna confit and their pre dessert of pear liquer sorbet which was refreshing and delicious! Service was very friendly and prompt. As the portions were small we thought we wouldn't be full by the end but we were stuffed after the two mains and struggled with the dessert. Being seated with the oversized cusions I just wanted to go to sleep afterwards. It took us around 3 hours to experience the night and would like to come back to try their 2 or 3 course menus.
