Classic elegance meets a pitch-perfect party atmosphere at the ground floor Establishment Bar. Flanked by lines of magnificent iron columns and a 42-metre-long marble bar centrepiece, the former George Patterson House retains much of its formal glory.
A space packed with heritage features that make this historic venue a unique place to enjoy a drink. Quick bar service, an experienced staff and a multi-award winner all add up to a true Sydney icon.

Went to Establishment with a large group of friends and had a great night. Didn't actually buy any of my own drinks but I think they were pretty reasonably priced for what a place like that would charge. I really like the layout of the place. Had absolutely no trouble getting in and neither did the guys that I was with. Wouldn't go there though without a group of male friends, it is very much like a cattle run as you walk up and down the bar.

What is the go with this free champagne on Thursdays. The time changes when I called I was told they don't have it on. Then, when I got there I was permitted one drink. Very over rated establishment.

I wouldn't really know what score to give for value because the thing is, whilst the place is a very nice venue, there are factors that make each experience I've had at the establishment very different such as who's at the door (which bouncers are working) and who's serving your drink (I find that service in the courtyard is much better - do they intentionally put the best barstaff they have back there?) plus of course who I am with on the night but value for money? Yes, I'd rate it pretty high, about a seven, coz the drinks are good and I just love the interior, what Justin did with that bldg is amazing! So the overall experience is alright. When smoking is banned I'll say the experience is great! Anyway, for disgruntled Ike I have this to say: Try again. You might just have found one of the sulky bouncers who I always avoid. Most are really nice though.

I'm glad so many have comments to make about the place because my friend and I never made it through the front door. Apparently my mate and I weren't welcome because we had no make up. Even though we were dressed in suits, it wasn't up to the doorman standard. As far as I'm concerned, the place discriminates against men and I won't be going back ever.

Takes a while to get served your expensive drinks - but always a great night is had at establishment! Thursday nights are good for the suits, and Friday nights are good for the party - great music, great combination of people, everyone's friendly and enjoying themselves. Saturday nights are quiet and doesn't get busy until very late.

Wow! How this place has changed in such a short time. It used to be the place to go for drinks, great night out and a bit of a flirt with a nice-looking, well-dressed guy. Id be embarassed to take anyone with a modicum of decency and class to this place now. There are much better places to go in the CBD.
The place is architecturally beautiful. Shame it's spoilt by the clientle. Complete decline in the level of clientele and enjoyment over the last few years. They should really ensure that a minimum dress code (no thongs, no denim) be enforced. The degrading behaviour of Westie's trying to be "up-market" is completely off-putting. Shame, because the premises deserve better!

Visited the Establishment last night being a Thursday night and was highly disappointed. The standard of clientele has dropped significantly. Thursday nights are definitely not the night to go unless you like to mingle with crass poorly dressed backpacker types - even rubber thongs! and thats just the women. The male suits were as usual witnessed and appreciated but seemed out of place compared to the style ( or lack of )of females present. A very odd blend indeed! What ever happened to dress code? Friday nights are definately the better nights to go. Better atmosphere, music and people!

Go during the day - or after work - but don't stay all night.... The Establishment is the closes bar to my office - so for after work drinks (AWD) the convenience factor outweighs any pitfalls. It's not bad - it's clean, breezy and the drinks are standard Sydney CBD prices. The crowd is corporate and the mood early evening is pretty chilled.
Hemmesphere on level four is fabulous - and the staff are marvelous.. can't fault them..Downstairs - especially if you're a girl - the bar staff will ignore you. It doesn't matter who you are - these rakish deep-fried blonde chicks never smile because they are simply too superior... And the hosts at Hemmesphere - are superb... a perfect ten.. It's just the downstairs staff need to remove whatever it is jammed up their backside.
bored or complacent and don't leave before the non-cbd sleaze gets bussed in around six pm - stay to watch the brassy, too dressed up (I mean - body glitter - OK, nobody thinks you've just come from the office Despina - more like the outer suburbs hairdresser you work at, or worse... I overheard one girl discussing the pitfalls of working at BigW)
Anyway - these golddiggers in too tight, too perma-tanned girls whose voices go "up at the ends" are tres annoying and give the place a bad name. They chew gum, constantly adjust their bra straps, and finish sentences with a pause and the word "but"... Ironing boards with hair and eyes, they just waste space... Anyway, obviously these girls are usually there for one reason and one alone - to talk to the bevy of greasy "finance" executives in their late 30's - who probably don't even work in the city, but own a suit - that's all that seems to be required... Fun to watch the ritual, just don't participate if you have one scrap of dignity. But hey, if you are the type of girl that responds to "I drive a BMW, ... this is your Mecca.

After the bounders were such rude people, I was expecting to see Sydney's A-list in this bar. But, it was full of nobody people in suits in their 30s. Give this one a miss, not as cool as they'd like. Not to mention they serve $5 schooners in the wrong type of glass...
