    This restaurant is top shelf! We dined last week in the Nuevo Private Dining Room (PDR), and had an amazing experience. With two children with us, the PRD was perfect as we could close the doors and enjoying ourselves as the kids amused themselves.

    For entree, we shared a Jamon board (the best jamon you will find in melb) and 2 x tapas boards (these had a concontion of hot and cold spanish tapas). A great start to the night. For main we had Lamb, Wagu, Prawns and Rabbit, all were equally tasty and worth having again.

    Overall, we stayed for over 3 hours, not bad considering we had two 18 month olds with us. How many top notch restaurants in Melb could you do that and not feel as though you were annoying everyone else around you? None that I can recall. Definitely worth a visit.

    If you can get a taxi to take you to the new Hilton South Wharf, it's worth a visit to experience Nuevo 37 and the fabulous fit-out of Sotano, the adjacent wine and tapas bar.

    5 taxi drivers in a row told us they had no idea where Hilton South Wharf is, even though we could point to the large Hilton sign glowing on the horizon on the other side of the river. And the one we forced to take us there tried to leave us by the side of an overpass so we could walk through a construction site. Once we got ourselves to the circular driveway, outstanding Hilton service from the doorman, who walked us to the bar, put the rudeness and incompetence of some Melbourne taxi drivers into stark relief.

    Cocktails at Sotano Bar were a long long time coming, but there was plenty to look at while we waited. The overhead wine cellar is amazing and the space looks great. The bar seating is very comfortable but set quite far apart and it's hard to be heard by your companion.

    Nuevo 37 itself offered an interesting journey through Spanish cuisine. The staff were eager but very nervous in delivering the detailed explanations of dishes. The stand-out in terms of service is the fabulous sommelier. His personable presentation of some unusual selections as part of the degustation menu was the highlight of our visit.

    Some of the dishes hit the mark, others were harder to love. The duck burger was a sensation and the chocolate dessert medley, complete with choc pop candy, was strange but great. All beautifully presented. When the restaurant gets into its stride and the waiters get more comfortable with the script, it will be a stunning night out. Much more than standard hotel restaurant fare.

    Attentive service, topping up water and often asking about wine and beverages, with rare minor slips. Extensive winelist with many non-mainstream offerings. Comfortable banquets, though ferns hide the actual view of the Yarra.

    Interesting amuse-bouche of pumpkin gel, though, unfortunately, repeated as part of one of the special entrees. The food was passable, but not of the highest echelon, and not reflective of the prices. For the corporate/convention dollar.
