Executive chef Bente Grysbæk and her team give a contemporary interpretation of old school Danish cuisine.
We've deconstructed the classic smørrebrød, stripped it down to it's most basic of elements - then built it back up, giving it a modern interpretation utilising the freshest, locally sourced ingredients.
Visiting local farmers markets and in collaboration with our suppliers we are continuously seeking out interesting, seasonal produce to create our cuisine.
Prior to venturing down south Bente worked in some of Denmark's most revered culinary institutions - renowned chef Francis Cardenau as her mentor. As sous chef at Le Sommelier, Bente perfected her craft by creating uncompromising French cuisine. Bente then moved onto the position of sous chef at Umami.
As executive head chef, Bente Grysbæk grabbed the reins and implemented her unique culinary style at restaurant DANSK - creating contemporary Danish cuisine, marrying old traditions with new techniques and flavours.
