Bistro Guillaume recaptures what the best bistros in Europe have to offer. The bistro features a large outdoor terrace, a private room and a spacious dining area. It offers a plat du jour but also adjusts to solo diners such as (Crown) hotel guests or small groups and couples. Service is relaxed and diners are urged to pour their own wine—10 white and 10 red, half of which are from France while the other half are from Victoria.

I only had dessert (cream caramel + ice cream + macaron) and coffee there. It's reasonable I really expected more from a high-end restaurant at Crown Casino.

Didn't quite live up to my expectations. Service was good and our French Waiter was happy to recommend his favourites which we ordered. I had the Beef Daube which was fork tender served with a beautiful mash & veggies. The only issue is I had next to no sauce. With such a generous serving of beef it became very hard to finish. If only they had provided a lot more sauce it would have been an outstanding dish. My friends had the John Dory with Lemon & Capers and Barramundi with Carrot Puree. The Barramundi was excellent but the John Dory (although well cooked) lacked in flavour as the capers did not provide much punch at all. The sides also had issues. Duck Fat Roasted Potatoes with Garlic & Green Pepper sounded wonderful but didn't deliver. The potatoes were not crispy and the green pepper left a burnt taste in your mouth. The Brocillini with Almond Butter could have done with more butter as it was a bit bland. Dessert was lovely with a very large serving of Profiteroles. Could easily be shared between 2. Overall I enjoyed the night but I'm not sure the food is worthy of it's one Chef's Hat.

We went for a Saturday night dinner with no booking and got a table outside. The table was fine, but needed a better wipe down from the previous diners. The wait staff were friendly and attentive even though they were clearly very busy.
The food was really delicious, unpretentious, generous and exactly what we were expecting. Sadly we didn't get to try any desserts as we were too full from a shared entree (scallops with pea puree and sauteed mushroom), main (I had the pork belly on lentils and my husband had the beef daube) and shared side (spinach with garlic and lemon). Highly recommended.

We had an excellent dinner here. The location is just perfect and the atmosphere outside on a cool night with the heaters on is lovely. The service was friendly and efficient and the food I thought merits the chefs one hat rating.

To follow we had the very best of French comfort food, simply described on the menu as Steak Frites and Roast Chicken!
The steak was beautiful, medium rare, served with crispy chips and peppery water cress. The sauce bearnaise brought the whole dish together and was heavenly!

This is a great place to sit and enjoy good food, great service and the delight of watching the world pass by. Sitting watching the Melbourne Skyline in this french bistro is a great experience. The Gazpacho was delicious and the King Salmon fillet was cooked perfectly, my companions had the shucked oysters, followed by Beef Daube which was to die for. Queary Pinot Gris 2010 really balanced this meal, followed by great coffee.
Service is very attentive and respectful, whilst being wonderfully warm and friendly. Price is very reasonable. Recommended.

Busy with a great atmosphere, food and service not upto a 1 hat standard, wine service sloppy. Ceiling at bar had a nasty water leak. Wouldn't rush back as there are better options on South bank.

Overall pretty happy with the meal. Had the smoked salmon and brioche entree which was great. Also got to sample a bit of the onion soup, not too bad - not normally my cup of tea though. Main dish was the half roast chicken with paris mash, was sensational. Had it with a side of green beans which complimented the dish well. Staff were very friendly and the atmosphere was pretty good, was a busy Friday night and sat outside on a cold winter night but the heating was fine and didn't feel the cold. Would go back.

Very disappointed! Two of us ventured into the Crown complex on a Thursday night and decided to try this bistro that we had heard lots about. We won't be back.
Food was basic fare at best, my steak was well cooked but nothing I couldn't knock out at home. My wife's fish dish was similarly bland. Ambience is okay but nothing startling.
Service was woeful. No butter with the bread, no steak knife, wrong wine, wrong coffee, just not upto the standard we always expect in Melbourne. Therefore, value is very questionable. I was surpised initially to see such an ordinary rating, now I know why.
