I found very little of Mr Mangan's influence at Salt Grill. I'd describe the menu as standard 5 star hotel fare with a few (I recall three or four) "signature dishes."
Someone once said to me "don't sleep in restaurants and don't eat in hotels." Me thinks that's wise advice.

Been many times as we are living in the hotel for work at the moment. It is hit and miss on the service but the food is generally worth it.

There was no doubt we were in a Luke Mangan establishment. The celebrity brand is very evident but the quality lived up to the hype. Glitch on arrival as had specifically asked not to be sat at Banquette seat, one of my personal dislikes. However, Maitre d' promptly moved us to table. Bit of dark gloomy spot behind the massive central wine room but at least we weren't sitting side by side with strangers.
Service was good but we were out of view for top line service. Food was excellent. Signature crab omelette in miso mustard broth deserves its reputation and star was the lobster tortellini in coconut broth. Mains were simple but excellent produce shown off by the good cooking. Fillet was one of most flavoursome steaks I have had. Ocean trout oozed it's freshness.
Wine list is impressive but all at Sydney mark ups which make the good wines expensive. But what the heck, go the whole lot at an establishment like this.
Expensive night but the value in the setting, the food is all worth it. Great little cocktail bar adjoins. Only downside is it is in the middle of Surfers, it is still tacky especially on saturday night when the Yobs come to town.
