Cheong Liew's degustation was amazing and we had an exceptional evening. The wait staff were fantastic, keenly reciting each portion correctly (relax guys, you're doing a great job). The only mis-step in the selection was the shark lip which came too late in the meal and was matched with a far too heavy dessert wine. The beef would've been a fine way to end the meal. I also thought having cheese as the only dessert option was an easy way out for a man who had shown his talent so effortlessly throughout the rest of the meal. He really could have shown off his skills there and missed an opportunity to do so.
Something must be done about the ambience given the hefty price tag. Truthfully, I have been to italian restaurants in shopping centre food courts with more ambience. I agree with everyone else's comments here. It feels like an extension of the brasserie, including the brasserie's deep fried scent. The chairs are overly large and uncomfortable. The tables seem to be of the one-size-fits-all variety which I'm sure is great for larger groups but far too big for small gatherings.
Truly remarkable food and careful service are let down by the setting.

What a disappointment. The (very expensive) degustation menu was a disaster. After a very long wait after course #3, the waitress brought out course #5. When we pointed out that the venison course had been missed the plates were removed hastily to the kitchen, only to be trundled out again five minutes later with the message that "Kitchen staff says" it would make no difference what order the courses are eaten in.
As we had already consumed half of the matched wine for the original course, we wondered if we would be, at least, offered the correct match to the set menu. No such luck. The wine waiter explained that it would not really matter which wine we have with which dish. Couldn't believe the arrogance. My understanding is that kitchen staffs are quite particular about the delicate balances of flavours. They were not able to admit a mistake and tried to cover it up by taking us for idiots. The Cheong Liew's "Migration of Ideas" ran aground on its journey.

What a disappointment for a fine dining experience, we shared the "room" with the front reception and the bistro next door, separated only by a curtain. All the buzz was coming from these rooms which severely distracted from the atmosphere. The food was good but not sublime for the pricing, with many dishes being over busy, making it difficult for the wine matches. I so wanted to enjoy this experience and just feel as though the environment killed any chance of greatness.
